Health Omlette

How many of you come home from a hectic day and just wish you could have a quick healthy bite to eat,without too much mess or fuss.

This power packed omelette will satiate you for the evening and leave you feeling good.

INGREDIENTS: (Eating for two)

  • 3 Large Eggs
  • Half Cup Soya or Normal Milk

SALAD ITEMS:

  • Wild Rocket
  • Baby Spinach
  • Tin of Tuna or Saschimi
  • 25 grams cut up Goats Feta
  • 4 Chopped up Peppadews
  • Chopped Garlic Clove
  • Chopped Chives
  • Half Avocado

Mix all the salad ingredients in a bowl
Beat the eggs with the milk and pour half of the container into a teflon pan on a low to medium heat.
I like to use coconut oil in the pan its far better than anything else and provides a nice flavour to the omelette

Let the egg base cook a little and as it begins solidifying add the salad ingredients mentioned above.
When the egg is ready then fold it over the contents
Throw some ground pepper and turmeric on top for some flavour

OR

If you want to add a sauce try this for size:
In a mug add:

  • 2 tablespoons of raw tahini
  • Half Lemon squeezed
  • Chopped Garlic
  • Sea Salt
  • Chopped fresh chili

Mix vigorously, add some water to gain a little more viscosity as you desire.

Pour over the omelette
